After years of experimenting with fermentation and pushing the limits of what coffee can be, Elkin developed his honey process to bring together the best of both worlds: the fruit-forward character of naturals, with the sweetness and balance honey processing does so well. This honey-processed Red Bourbon microlot is a beautiful expression of that approach.

The result? A cup full of personality, with jammy mango, fresh strawberry and soft vanilla notes. A joy to drink, start to finish.

Elkin Guzman - Finca El Mirador

Elkin Guzman is one of Colombia’s most forward-thinking coffee producers, and the driving force behind El Mirador Farm, a family farm perched in the mountains of Palestina. Trained as an agronomist and deeply curious by nature, Elkin has spent years pushing the boundaries of what coffee can be — experimenting with fermentation techniques while staying grounded in transparency, quality, and care for the land.

Together with his wife Diana, Elkin oversees every step of production at El Mirador, a farm that has been in his family for nearly 80 years. He’s widely respected not just for the exceptional quality of his coffees, but for his openness — sharing knowledge, welcoming roasters from around the world, and being refreshingly honest about how flavour is created. Innovative, thoughtful and quietly confident, Elkin’s coffees are a reflection of his approach: expressive, intentional, and never boring.
