As specialty coffee roasters we love sourcing the best coffees and then turning them into tasty coffee beans for your brew. And we are working hard to build a fairer coffee supply chain. For us this means, we are sourcing many of our coffees directly from women coffee growers. Sourcing coffees from women growers means providing better opportunities.
That’s why we are super excited to roast this delicious Colombian coffee for you - produced by women growers of the ASMUCAFE association ‘Asociación de Mujeres Agropecuarias de Uribe’ in El Tambo located in Colombia’s Cauca region.
The coffee, all of which is of Castillo or Colombia variety, is picked as purple (Castillo) or bright red (Colombia) cherry, and undergoes a somewhat unusual "double" fermentation process, as the women growers describe it: First, the cherries are left in the loading hoppers for 14 hours, then they are then depulped in the afternoons and evening hours and placed into traditional open fermentation tanks for another 10 hours. Then they are washed three to four times before being dried in the sun for 8–12 days.
Recommended brewing methods
We roast this Colombian single-origin coffee to a medium roast level. A medium roast level lets us craft a sweeter more balanced and approachable cup with a good body, whilst maintaining the coffee's origin character and its punchy acidity.
Perfect for espresso, stovetop, Aeropress, batch brew and plunger coffee-style brewing.
