This exceptional microlot of Red Acaia has lovely notes of raspberries and blackberries. The lot was produced by Andressa Borges, a new and up-and-coming 21-year young coffee farmer from Campanha in Brazil using natural carbonic maceration fermentation. Curiosity and the desire to go her own way in the world of coffee this young farmer has experimented with this new and hugely popular fermentation technique.
The coffee cherries left intact were placed together with ‘cajá-manga’, an acidic Brazilian fruit, into closed drums, where they were left for 72 hours. The oxygen starved environment allowed a controlled and prolonged fermentation time to create a unique flavour profile. After 72 hours, the cherries then were transferred to drying beds for slow sun drying.
